Infantry only is perfectly viable provided you make sure you keep enough mounts in your inventory to keep your speed up, too many will slow you down so about 1 per soldier does the trick. It's either max khans guard, or combo of fians and legionary for me. The khans are best at open field, but a well placed slope defense with the foot army can just wipe the floor with anyone. It's more finicky, but it's also better for sieges as khans guards don't carry shields.
