From what I can find for the Acadia, you can disable the traction control by pressing the TC button, but you can't turn off Stabilitrack. My Silverado is similar, but pressing the TC once turns off the traction control and holding it down for 5 seconds shuts off Stabilitrack completely.A basic power cycle may sometimes resolve a StabiliTrak issue.
