In Bannerlord, this sort of thing just cannot be modeled, and therefore the critical weakness of cavalry isn't really represented. Meaning you can pretty much always ram your cavalry teeth first into any wall of infantry and reasonably expect most of them to come trotting out the other side having inflicting major casualties in the process.

I like to have a mix of everything. Infantry, archers, horse archers and cavalry. I find a hill and place archers with infantry in the foot of the hill in front. Then i go with the MAs and and cavalry to harras and kill their mounted units. If their footsoldiers wont move, I harras them with MA untill they rush my infantry and then sandwich them.

In my experience a large number of high quality archers are the absolute best defense you can have, yeah. I think you'll want to look at the weapons your infantry/cavalry use, shields are good for attacking the walls but I personally feel like strong two-handed weapons are great for pushing back enemies trying to scale the walls.
