New to the 1911/2011 system. Better trigger, tighter tolerances, way more accurate. If these were foods, the sig would be happy meal and the UL is a spicy 4 course steak dinner. It all depends on what you want. If you want a range gun, the Tac 2 is great. But it's steel frame gun and is heavy. BUL SAS UL 2 is the lightest option for carry and the cheapest, but the grip is pretty chonky and it seems hit or miss who shoots it well. If you like a glock or full size 2011 grip you'll be fine.
